This recipe of shortbread cookies requires a mere 3 ingredients and tastes as perfect as the ones you buy from the fanciest bakeries in town! These rich and eggless cookies will ooze such lovely buttery aroma throughout your house that even the neighbors will be compelled to ask, “Hey, what’s cooking in your kitchen?” 😉
A perfect morning or evening tea accompaniment, you just have to whisk the 3 very basic ingredients to prepare this. Just, knead the ingredients to a soft dough and then either spread the dough on a lined spring form pan, greased baking dish or shape it as desired and then pop it all in the oven. Within 30 minutes (or less) you will have this addictive snack ready to be eaten.
And, that’s not all warm it up a little and then top it with a humongous scoop of your favorite ice cream and then load it all up with some of your favorite dessert toppings to enjoy a yummylicious dessert that will definitely kick away the day long stress and worries! Yummm…
Prepare the baking dish or spring form pan by either greasing it well with some vegetable oil or line it with some butter paper. Keep it aside. Preheat the oven to 175 degrees C.
In a large bowl, whisk the softened salted butter with granulated sugar for 2 minutes or until light and fluffy.
Gently whisk in the flour and mix it until the dough is soft and just about comes together.
Now, transfer the dough in to the prepared baking dish and use a spatula to flatten it out from the top.
Bake the shortbread until 30 minutes (or less), or until golden brown at the top. Cool the bread and cut it in to wedges or small rectangles.
Remove and enjoy!
Do not over knead the dough. You may add a few drops of vanilla essence if desired. Maintain the baking temperature and you might need to keep a watch on the cookies in the final minutes of baking.
