Apple Almond Cookies are crumbly and delicious sweets, prepared with a butter-free dough made with flour, almonds and soft wheat, seed oil, sugar, baking powder, lemon zest and diced apples.

Soft and fragrant, they are perfect for breakfast or as a snack for a healthy and wholesome break, but they are also excellent to bring to the table at the end of a meal or for Sunday brunch with the family.

Ingredients

all-purpose flour
250g
sugar
125g
Sunflower seed oil
80 ml
almond flour
50g
Apples

How to Make Apple Almond Cookies

To prepare the apple and almond cookies, first collect the soft wheat flour and the almond flour in a bowl.

Mix the powders with a spoon, then flavor with the grated lemon zest and sweeten with granulated sugar.

Add the baking powder.

Mix briefly.

Break the egg in the center.

Pour the sunflower seed oil.

Mix the ingredients with a fork.

Add the apples, peeled and diced.

Continue kneading until you obtain a soft and homogeneous mixture.

Then take small portions of dough and shape them with your hands into balls the size of a walnut.

Arrange the sweets on a baking tray lined with baking paper. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes. Remove the cookies from the oven and let them cool completely on a wire rack.

Once cooled, dust the pastries with a light layer of powdered sugar, then transfer them to a tray, bring to the table and serve.

Storage Instructions

If you have any leftovers, the apple almond cookies can be stored at room temperature, tightly closed in a tin, for up to 2-3 days.
