Choose a nice pumpkin of the Delica variety, of which you can also eat the peel, and then cut it into slices. Then enrich them with rosemary, black olives, onions and cherry tomatoes, then sprinkle them with a rich breading made of breadcrumbs and grated parmesan cheese to obtain a tasty vegetable; thanks to cooking in the oven, moreover, it will be soft inside and irresistibly crunchy and gratinéed on the surface. How to make baked pumpkin

Clean the pumpkin, remove the seeds and internal filaments, and wash it thoroughly. Cut it into slices about 1-1.5 cm thick.

Spread the pumpkin slices on a baking sheet lined with parchment paper.

Add the cherry tomatoes, cut in half, the onions, cut into wedges, and finally the olives.

Mix the breadcrumbs with the rosemary, grated parmesan cheese and a sprinkle of ground pepper.

Drizzle with oil and then sprinkle the vegetables with the breading. Bake at 200 degrees C and cook for about 20 minutes, or until the pumpkin will be soft.
