This easy Zucchini Parmigiana is perfect for when zucchini is abundant from the garden. It only includes five ingredients including thinly sliced zucchini, ham, mozzarella, and parmesan for a simple dish that can be served for lunch or dinner.

To make this zucchini parmigiana, you simply layer sliced zucchini with ham, scamorza or mozzarella, and parmesan before baking it in the oven until hot and cooked through.

How to Make Zucchini Parmigiana

Step 1: Wash and cut the zucchini into thin lengthwise slices. Place one layer of zucchini in a nonstick baking pan and sprinkle it with salt.

Step 2: Top the zucchini with the ham, cheese, and parmesan.

Step 3: Top the ham and cheese layer with another layer of zucchini followed by additional ham, cheese, and parmesan. Add another layer of zucchini and cheese, along with additional parmesan. Bake it in a 350 F (177 C) oven for 30 minutes.

Step 4: Allow it to cool for a few minutes before serving.
