This dish is quite wholesome with a variety of veggies, proteins, and carbs. This one dish is enough to meet all your morning nutrient requirements and can be even assembled a night in advance. Just bake it fresh in the morning to savor this scrumptious preparation!

INSTRUCTIONS:

Melt a half tablespoon of butter in a non-stick pan and cook onions in it until golden brown. Remove onions in a bowl and then add another half tablespoon of butter into the pan and cook mushrooms until it is soft.

Remove it in the same bowl containing onions and then add remaining butter and oil into the pan. Cook potatoes in it until it is golden in color and slightly crispy.

Remove the potatoes into a baking dish and then spread them well at the base completely. Add the eggs, sour cream, seasoning, salt, pepper, stripped ham, Mexican cheese, onions, and mushrooms in a large bowl. Mix everything well and then pour it over the potatoes into the baking dish.

Preheat the oven to 175 degrees C. Sprinkle cheddar on top and then bake it covered for 25 minutes. Uncover and bake it again for 5 to 7 minutes or until golden in color. Slice, serve, and enjoy!

TIPS

You can even use hash browns instead of using potatoes for this preparation.
