Cold Roast Beef Sandwich With Pickles and Caramelized Onions

Roast beef is a popular Anglo-Saxon specialty, also enjoyed in the U.S.. It's usually enjoyed as a main course with a side dish, but it's also delicious in a sandwich. Our roast beef, caramelized onion, and pickles sandwich is rich and flavorful, with a well-balanced flavor and a variety of textures. It's ideal as a stand-alone dish, and, using pre-made roast beef, it's also quite quick to prepare. It's also a great way to reuse leftover roast beef.

The roast beef sandwich is characterized by its strong, bold flavors, which together create a truly delicious experience. The tenderness of the beef pairs perfectly with the sweet and sour caramelized onions, the acidity of the pickles, and the saltiness of the mustard, for an explosion of flavor that's hard to resist.

How to Make Cold Roast Beef Sandwich

To make the sandwich, we'll start by caramelizing the onions. Peel the onion and slice it thinly. Then, sauté it over medium heat in a nonstick pan with a knob of butter and a pinch of salt, stirring occasionally. After a few minutes, add a glass of water, lower the heat and wait for the onions to soften: it will take about 10-15 minutes.

Once the onions are soft, add the sugar and raise the heat slightly. When the onions begin to caramelize, remove from the heat and let cool.

Meanwhile, cut the roast beef into thin slices using a sharp knife or a slicer.

Season the meat with a pinch of salt and a drizzle of extra virgin olive oil.

Also slice the pickles into rounds.

At this point, toast the slices of sandwich bread on a grill, 2-3 minutes per side, until golden brown.

Once you have all the ingredients ready, you can assemble the sandwiches. First, spread a generous teaspoon of mustard on each slice of bread.

Then arrange the caramelized onions.

Continue with the sliced pickles.

Finally, finish with four slices of roast beef for each sandwich, then close with the other slice of bread.

Cold Roast Beef Sandwich Variations

  • We chose sandwich bread, which we lightly toasted on a griddle, but you can use any type of bread you like.
  • You can also replace the mustard with mayonnaise, tartar sauce, or Mornay sauce.
  • If you're making a roast beef and cheese sandwich, we suggest choosing a semi-firm cheese like Emmental.
