If you are on the search for an easy dessert to make and one that is incredibly creamy, try this Cookie Trifle Recipe including layers of chocolate cookies and homemade custard. As the trifle sits in the fridge, the cookies soften and become cake-like in the mixture.

To make this easy trifle recipe, you make a custard on the stove by combining eggs with sugar, salt, vanilla, cornstarch, and flour. Then, you add milk and cook the mixture until it is thickened. After that, butter is whisked in to give it more richness. Assembling the trifle is incredibly easy; all you have to do is layer chocolate cookies with the custard to create multiple layers before topping it with melted chocolate.

What is Cookie Trifle?

Cookie trifle is inspired by a classic English dessert involving layers of fruit, custard, and cake. However, it is a little different as rather than using sponge cake, this recipe utilizes store bought chocolate cookies that become soft and cake-like as the trifle sets in the fridge. This version also doesn’t contain any fruit but it isn’t needed considering how delicious it is with the layers of homemade custard, cookies, and chocolate garnish.

Pro Tips

  • Continuously whisk the custard mixture to ensure that the mixture doesn’t become lumpy or curdled.
  • Don’t cook the custard over too high of heat as you don’t want the pan to scorch. Cooking over medium heat will be perfect.
  • If you would like to make a dairy-free custard, you can replace the milk and butter with plant-based versions.
  • Create several layers of cookies and custard to ensure you get plenty of cookie and custard in every bite.

What to Serve with Cookie Trifle?

Simply serve slices of this trifle with coffee or tea for a decadent dessert. However, you could also serve them with fruit such as fresh cherries or strawberries.

Why is My Custard Lumpy?

If you find that your custard is lumpy rather than being smooth, it is likely because it wasn’t whisked frequently enough. When you are making the custard, make sure you continuously whisk the mixture until it is thickened. You custard may also become curdled if you are cooking it over too high heat. The best heat level to cook custard over is around medium.

How Can I Correct Curdled Custard?

If you find that your custard has curdled, you may be able to save it. Simply pour the mixture through a fine-mesh sieve which will remove the curdled bits from the custard.

Can I Add Fruit to Cookie Trifle?

Yes, if you enjoy a traditional English trifle and would like to add fruit, you can definitely do so. The best types of fruit to pair with chocolate are cherries or berries like blueberries, blackberries, or strawberries.
