The corn fritters are a delicious and easy to prepare appetizer, a quick recipe based on a batter made with flour, milk, eggs and herbs to which the precooked corn is then added. The fritters are then fried in boiling oil and served hot or warm. A nice recipe for an aperitif or a last-minute dinner, a tasty idea also excellent for those who follow a vegetarian diet. Here's how to prepare them in no time!


Prepare the batter: in a bowl beat the eggs, then add the flour a little at a time, add the milk and mix all the ingredients until  you have a smooth and lump-free batter. (1)

Rinse the precooked corn (2) and drain it. Now add it to the batter together with salt, pepper, grated Parmesan cheese, chopped chives and parsley, stir and let rest it in the refrigerator, covered with plastic film, for at least 15 minutes.

After the necessary time, heat the oil in a pan and pour the mixture with a spoon. Fry the fritters for a couple of minutes per side, or until they are golden brown. Once ready lay them on a sheet of kitchen paper, let them cool and serve them. Your corn fritters are ready to be brought to the table. (3)


Always cook the corn fritters a few at a time, so as not to lower the oil temperature too much. This will guarantee golden and crispy fritters.

You can flavor the corn fritters as you like, replacing chives and parsley with basil, or adding spices like cumin, coriander, etc… so as to customize them according to your tastes.

If you prefer, you can prepare corn fritters without milk: just replace it with cream or white yogurt. In this way you will obtain a thicker and fuller batter.

The corn fritters are excellent if accompanied by the guacamole sauce, a Mexican avocado sauce that will make your dish even tastier.

How to preserve corn fritters
You can keep the corn fritters in the refrigerator for 2 days at most within an airtight container. Before consuming them, heat them for a few seconds in the microwave oven. If you want to consume them cold, leave them out of the refrigerator at least half an hour before eating them.
