Country potato pancakes are more rustic in appearance than the regular pancakes. They are quite crunchy on the outside and soft inside. To get that perfect crunch, you should fry them a bit longer and until the pancakes are brown in color.

Press them slightly so that you get that nice crunchy and brown spots on them. So, enjoy them this winter while you celebrate the Christmas holidays!

Instructions:

Wash and then peel the whole potatoes. Grate the potatoes with large grates in a bowl. Now, take some of the grated potatoes and then squeeze out hard using a muslin cloth or hands to drain out the excess water from it.

Repeat until all the potato shreds are squeezed out. Carefully, break open the egg over potatoes. You can also add lightly beaten egg to it, if possible, Grate the peeled onion over the potatoes and then add flour, salt, and baking powder to it.

Mix the pancake mixture really well until it is evenly combined. Now, heat the oil for frying in a pan. Add a heaped tablespoon of the pancake mixture in it and then let it cook in the hot oil.

You can add another tablespoon of the mixture at some distance from the previous pancake. Cook the pancakes for 2 minutes or until the edges start to cook and then flip it and cook on the other side again for 2 minutes.

Flip the pancakes again until they turn brown in color on both sides. Repeat the process with the remaining batter. Serve hot potato pancakes and enjoy!

Tips

If using a nonstick pan, you may reduce the quantity of canola oil by half as well. Make sure that you carefully remove the egg shells while you break the egg. A wiser technique would be to break the egg in a separate bowl first and then use that broken egg for the recipe. You may also prepare the batter in advance and make the pancakes when you plan to serve them.
