Why Everyone Will Love This Recipe

This baked pasta offers everything you love about traditional oven-baked pasta: a creamy sauce, hearty ingredients, and a golden topping. The combination of zucchini, peppers, carrots, celery, cherry tomatoes, and peas creates a colorful and flavorful filling, while the soy béchamel adds a smooth and comforting texture.

The crunchy hazelnut and breadcrumb topping provides a wonderful contrast to the creamy pasta underneath. It’s a satisfying dish that can be enjoyed by vegans and non-vegans alike.

What Is Vegan Baked Pasta?

Baked pasta is a beloved comfort food found throughout Italian cuisine, with roots in the tradition of preparing pasta dishes enriched with sauces, vegetables, and cheese before baking them until golden. Classic versions often include béchamel, mozzarella, or other dairy ingredients, while vegan variations adapt the recipe using plant-based alternatives.

The use of béchamel dates back centuries in European cooking, and today soy-based versions allow cooks to recreate its creamy texture without dairy. Vegetables such as zucchini, peppers, carrots, and tomatoes have long been central to Mediterranean cuisine, making this vegan baked pasta a modern interpretation of traditional Italian flavors.

Cooking Tips

  • Cook the pasta only until al dente because it will continue cooking in the oven, and this helps prevent the final dish from becoming too soft or mushy.
  • Cut the vegetables into similar-sized pieces so they cook evenly and each serving contains a balanced mix of flavors and textures.
  • Sauté the leek first to release its delicate sweetness before adding the other vegetables, creating a more aromatic and flavorful vegetable base.
  • Prepare the soy béchamel slowly by adding the warm milk gradually to the roux while whisking constantly, which helps create a smooth sauce without lumps.
  • Season the béchamel with nutmeg because this classic addition enhances the creamy flavor and gives the sauce a more traditional character.
  • Mix most of the béchamel with the pasta while reserving some for the top layer, ensuring the baked pasta stays creamy inside while developing a golden surface.
  • Combine the breadcrumbs with olive oil before adding them to the topping so they become crisp and golden during grilling.
  • Allow the baked pasta to rest briefly after removing it from the oven because this helps the layers settle and makes portioning easier.

How to Make Vegan Baked Pasta

To prepare the vegan baked pasta, first trim the zucchini and cut them into small pieces.

Clean the celery and cut it into slices.

Divide the peppers into slices, remove the seeds and the white filaments inside and cut these into cubes of the same size, then proceed in the same way with the carrots.

Cut the yellow and red tomatoes into wedges.

Let the sliced leek wilt in a non-stick pan with a drizzle of extra virgin olive oil.

Add the diced vegetables and let it cook for about 8 minutes, stirring occasionally.

Once the time has passed, season with salt and pepper.

Then add the well-drained pre-cooked peas, mix thoroughly and continue cooking for another 3 minutes. When finished, remove from the heat.

Plunge the sedanini rigati into plenty of lightly salted boiling water and let them cook for about 8 minutes.

Meanwhile, prepare the vegetable béchamel sauce: pour the corn oil into a saucepan with a thick bottom.

Add the sifted flour all at once, and mix vigorously with a hand whisk.

Gradually pour in the soy milk, previously heated on the stove.

Let it cook, stirring continuously with a whisk, until you obtain a béchamel sauce of the right thickness, then season with salt and a pinch of nutmeg and remove from the fire.

Once ready, drain the pasta al dente and transfer it to a large bowl together with the vegetable ragù.

Add 2/3 of the prepared béchamel sauce and mix with a wooden spoon to combine the ingredients.

Spread the dough into a 24 x 14 cm rectangular baking dish.

Cover with the remaining béchamel sauce.

Sprinkle with chopped hazelnuts.

Pour the breadcrumbs and a drizzle of extra virgin olive oil into a small bowl and mix carefully with a spoon.

Spread the breadcrumbs on the surface and leave everything to brown in a hot oven at 465°F/240°C for about 5 minutes.

When a golden and fragrant crust has formed on the surface, take the pastry out of the oven.

Distribute the vegan baked pasta onto individual plates, bring to the table and serve. Enjoy!
