Crispy Oven-Roasted Chickpea Fries

Crispy Chickpea Fries are a delicious finger food, perfect as an appetizer or for brunches and buffets. Ideal for serving at the start of a meal with friends, along with tasty dips like guacamole, baba ganoush, or a simple homemade mayonnaise, they also make a great snack any time of day.

Making them is very simple: just bring water to a boil, add sweet paprika, dried oregano, and salt, then slowly incorporate the chickpea and corn flour, stirring constantly with a whisk to avoid lumps. Once the mixture is smooth, spread it in an even layer on a baking sheet lined with parchment paper and let it rest for an hour. Then, cut it into strips about 1 cm wide and roast in a preheated oven at 200°C (390°F) for 20 minutes.

The result will be crispy, dry chickpea fries, perfect for taking with you as a snack to the office, school, or the park, for a light and nutritious treat.

Ingredients

Chickpea flour
100 grams
corn flour
50 grams
water
600 ml
Dried oregano
1 tsp
Sweet paprika
1 tsp
Extra virgin olive oil

How to Make Chickpea Fries

Bring the water to a boil and add the sweet paprika, dried oregano and salt.

Start pouring the corn flour and chickpea flour little by little, stirring continuously with a hand whisk to avoid lumps forming.

Cook over low heat, stirring continuously, for about 5 minutes.

The mixture should be thick and full-bodied.

Transfer it to a baking tray lined with parchment paper, greased with a drizzle of extra virgin olive oil.

Level the mixture with the back of a spoon to obtain a uniform thickness.

Let it cool at room temperature for about 1 hour.

Once the resting time has elapsed, cut out strips approximately 1cm wide.

Space them slightly apart to ensure even cooking.

Season with plenty of extra virgin olive oil and a pinch of salt, then roast in a preheated conventional oven at 390°F/200°C for about 30 minutes, until golden brown. For an even crispier result, you can activate the grill function during the last 5 minutes of cooking. Once ready, remove them from the oven and let them cool for a few minutes.

We opted for roasting them in the oven, with the last 5 minutes on broil, but if you prefer, you can reduce the cooking time by cooking them in an air fryer. For a more indulgent option, you can deep-fry them in hot seed oil until golden brown.

What Corn Flour Should I Use?

As for corn flour, we recommend using fioretto flour, which is easy to work with and suitable for any recipe, or instant polenta flour.

Can I Top These Fries With Anything?

If you like, you can sprinkle white or black sesame seeds on the fries before cooking them: in addition to adding a pop of color, they'll also add a truly irresistible crunch.

What Else Can I Add to These Fries?

If you like, you can flavor the chickpea stick mixture with your favorite herbs and spices: rosemary, thyme, and dried sage are ideal, but fennel, dill, cumin, and curry are also good options for a slightly oriental touch.
