Suitable for celiacs and those with gluten intolerance, these delicious, crispy medallions are perfect for any family lunch or dinner, paired with a small bowl of mixed salad or other favorite side dish.
Here, after shaping the burgers with a pastry cutter, we cooked them in a pan with a drizzle of extra virgin olive oil: for a crispy outside and soft and flavorful inside.
