What Is Asparagus Flan?

Asparagus flan is a savory baked custard made with eggs, vegetables, and dairy. Cooked gently in a water bath (bain-marie), it develops a soft, delicate texture similar to a savory pudding. Popular in Italian and French cuisine, savory flans are often served as appetizers and paired with creamy sauces or light garnishes to enhance their flavor.

Cooking Tips

  1. Use a bain-marie: The water bath ensures even cooking and prevents cracks.
  2. Blend well: A smooth mixture guarantees a silky texture.
  3. Don’t overbake: The flans should be just set in the center.
  4. Grease molds: This helps release the flans easily after baking.
  5. Strain if needed: For an ultra-smooth finish, strain the mixture before baking.

How to Make Asparagus Flan

To prepare the asparagus flan, start by removing the tough, leathery ends of the asparagus stalks. If necessary, you can also peel them with a vegetable peeler. Then, bring a large pot of water to a boil, add a pinch of salt, and cook the asparagus for about 15 minutes.

Transfer the asparagus to a food processor, reserving a few tips for garnish. Add the eggs and blend until you obtain a smooth and homogeneous cream.

Combine the parmesan, cooking cream, salt and pepper, then blend for a few more moments to create a smooth and uniform mixture.

Butter and flour the muffin cups, then place them in a deep baking pan. Pour the batter into the pan, leaving about 1 cm of space around the edges. Finally, fill the pan with about 1 cm of water. Cook the flans in a bain-marie in a preheated static oven at 355°F/180°C for 20 minutes.

Meanwhile, prepare the sauce: put the cream in a saucepan and add the grated parmesan, a couple of tablespoons at a time, mixing everything well with a spoon during cooking and gradually adding the rest of the cheese.

You should get a thick and smooth sauce.

Once cooked, remove the flans from the oven and carefully turn them out onto a plate, turning the molds upside down. Garnish with the Parmesan sauce and complete with the reserved asparagus tips.

The asparagus flan is ready to be enjoyed!
