These Apple Cinnamon Cookies are similar to thumbprint cookies, where dough is pressed to create a hollow to hold some kind of filling. Usually, thumbprint cookies are filled with jam, caramel, or lemon curd, but this cookie recipe includes a spiced apple filling. These apple cinnamon cookies make a wonderful dessert or snack with their sweet apple and cinnamon taste.

To make the cookies, you begin by making a dough out of butter, brown sugar, egg, egg yolk, vanilla, flour, and baking powder. Then, they get divided into balls that are rolled in cinnamon sugar, before they are indented and filled with the apple filling. These cookies make a wonderful treat with a pot of black tea any day of the week!

What are Apple Cinnamon Cookies?

These apple cinnamon cookies are basically thumbprint cookies that are filled with an apple spice filling. The dough is dense enough that it is easy to shape into balls while also being soft enough that you can create a hollow in each ball without it cracking.

To make these cookies extra delicious, the cookie dough balls are coated with a mixture of cinnamon sugar before being baked. They are also filled with a sautéed apple mixture that includes brown sugar and cinnamon. The resulting cookies have a wonderful apple spice flavor that is particularly delicious in the fall.

Pro Tips

  • Make sure your butter is softened before you make your dough.
  • Use a cookie scoop to divide the dough into balls to ensure they are even sizes.
  • For the cinnamon sugar, mix even parts of cinnamon and sugar together. You can make however much you need to ensure you can coat all of the cookie dough balls.
  • Use apples that will hold their shape when they are cooked. Macintosh, honeycrisp, and spartan are all excellent options.
  • If you don’t have apples on hand, you could also make this recipe with pears.
  • For added crunch, feel free to mix some chopped walnuts or pecans into the apple filling.

What to Serve with Apple Cinnamon Cookies?

These apple cinnamon cookies can be served with a pot of tea or cup of coffee to cut through the sweetness.

What Type of Apples Should I Use?

For the apple filling in these apple cinnamon cookies, choose apples that will hold their shape well when they are cooked. Apples like macintosh, honeycrisp, spartan, golden delicious, northern spy, jonagold, pink lady, and granny smith are all excellent options.

Can I Add Other Fillings to the Cookie Dough?

Yes, if you would prefer not to make an apple filling for these cookies, you could replace the apples with pears instead. Alternatively, you could forgo the fruit filling altogether and instead fill them with jam or lemon curd instead.

How Can I Tell the Cookies are Baked?

You will know the cookies are baked through when they are golden on their bottoms and around their edges. They may seem a little soft when you pull them from the oven but they will firm up as they cool.
