How to Make Blueberry Cheesecake

To prepare the blueberry cheesecake, first make the crust: blend the digestive biscuits until you obtain a flour, then add the melted butter and mix everything together.

Transfer the mixture into a 20cm diameter mould and compact it well on the bottom and along the edges. Place in the refrigerator and let rest for 30 minutes.

Prepare the filling: combine the cream, yogurt and lemon juice in a small bowl, mix and set aside for 15 minutes.

In another bowl, combine the ricotta, cheese, and sugar, then mix well with an electric mixer. Add the vanilla extract and egg and mix again.

Pour 170 grams of the previously prepared sour cream.

Mix well, then pour the filling onto the cheesecake base, level the surface and cook in a preheated static oven at 320°F/160°C for 1 hour.

Once cooked, remove the cheesecake from the oven and cover the surface with the remaining sour cream, then put it back in the refrigerator for 5 hours.

To make the topping, blend 50 grams of blueberries with water, lemon juice and sugar.

Pour everything into a pan and cook for a few minutes, then add the remaining 150 grams of whole blueberries and continue cooking until the sauce thickens.

When the cheesecake is well set and the sauce is cold, pour it on the surface, distributing it well.
