A European recipe of soft and fluffy baked pancakes, is ideal for a brunch, a weekend breakfast or a special date where you want to surprise or to treat well someone. It is made with ingredients that we commonly have in our kitchen such as flour, milk, sugar, eggs, butter, salt, vanilla and lemon. You can place a sweet companion on top of it (fruits in syrup, jams, syrups) or salty (ham, cheese, tuna) whatever the choice, I'm sure they'll be delicious. It is very fun to observe them while they are baking because they sponge themselves as if they wanted to escape from the pan and they are taking original forms, where none is the same as another and what makes them look very nice. Try them! Once you do, you will not want to stop repeating.

Instructions

Preheat the oven to 300F. Mix the flour, baking powder, sugar and salt in a deep bowl. Combine the milk, three tablespoons of butter, the eggs, the vanilla essence and the lemon juice. Add to the dry ingredients. Stir until everything is well integrated.

For this recipe you must use a skillet pan that is totally metallic, because after roasting one side of the pancake you must put it in the oven. Spread the skillet with the remaining butter. Heat the pan over medium high heat (350 degrees in an electric skillet). For each pancake, put about half a cup of the mixture in the hot pan. When the pancakes are ready to turn they will have bubbles everywhere and some of them have burst. At this point place the pan in the oven and bake for 20 minutes until all the pancake is well cooked. Use a wide spatula to peel off the pancakes. Serve with confectioners’ sugar and fresh berries to your liking.
