Easy and Quick Wholewheat Italian Flatbread (Lard-Free Variation!)

Wholewheat Italian Flatbread is a quick and easy recipe to make at home. It's a variation on the classic flatbread, using whole wheat flour instead of white flour and extra virgin olive oil, without lard. A light, fiber-rich dish, perfect for a delicious dinner or a lunch break at the office or in the park.

For our wholewheat flatbread recipe, we used whole-wheat flour broken down with a small amount of 0 flour, extra virgin olive oil, salt, and water: no lard, no yeast, and no baking soda. The resulting dough is rolled out into thin discs with a rolling pin and cooked in a nonstick pan, a few minutes per side. The result is a soft, crumbly flatbread, perfect for filling with your favorite ingredients and then rolling or folding into a crescent. It's also delicious on its own, replacing bread.

How to Make Wholemeal Flatbread

Pour the wholemeal flour into a large bowl.

Add the dose of 0 flour.

Add a pinch of salt and mix to uniform the powders.

Pour the water.

Start kneading, using your fingertips.

Add the extra virgin olive oil, continuing to work until the mixture becomes smooth and elastic.

Once you get a ball, let it rest, covered with a tea towel, for about 20 minutes.

Once the resting time has elapsed, divide the dough into 6 balls, each weighing approximately 90 grams.

Roll them out with a rolling pin to obtain discs 2-3 millimetres thick.

Place one flatbread at a time in a hot pan, greased with a drizzle of oil, and let it cook for about 2 minutes on each side, turning it with the help of a spatula when bubbles start to form on the surface.

Serve them immediately, or keep them warm until you are ready to use them!

Cooking Tips

Depending on your needs and budget, you can replace the 0 flour with a more nutritious type 1 flour, and the olive oil with seed oil. You can also add a splash of milk to make them even softer. You can prepare the flatbread dough by hand or with a stand mixer.

Storage Instructions

Once ready, the wholewheat flatbread can be stored for up to 2 days and filled as needed.
