Eggplant fries: the low carb recipe

This recipe of eggplant fries is the quickest way to prepare a low carb delectable snack. In just minutes, you will get a delicious spread of crunchy on the outside and soft inside fries!

You will be amazed that sometimes such simple ingredients can turn in to really amazing stuff, if seasoned right! Serve this deliciousness with anything of your choice, from the simplest mayonnaise to the light and rich yogurt dips, or even pasta sauce or ketchup.

This quick vegetable snack goes really well with a majority of accompaniments. However, make sure you serve it immediately after preparation to savor the amazing crunchy texture of these fries!

Instructions

Preheat the oven to broil and line a baking tray with aluminum foil. Lightly grease the foil with olive oil and keep it aside. In a small bowl, crack open the whole egg and whisk it with a fork.

Keep it aside. In another small bowl, add the grated Parmesan, Italian seasoning, and mix it until well combined. Wash and clean the eggplants with a paper towel. Trim the top of eggplant carefully and then slice it vertically in to third. Again cut the eggplant in to half vertically so that you get three eggplant slices about ¾ of an inch thick. Now, cut the eggplant slices in to long thick sticks of full length to that of the slices and about ½ an inch thickness. Dip the eggplant sticks in to the egg and then use a fork to coat the sticks nicely with the cheese mixture.

Arrange the sticks at some distance from one another on the lined baking tray. Now, either drizzle or spray some olive oil over the eggplant sticks. Broil the fries for about 3 minutes, turn upside down, and then broil for another 3 minutes or until the fries are light brown in color on all sides. Turn off the oven and let the fries stay inside the oven for another minute. Serve hot with the dip of your choice and enjoy!

Tips:

Crack open the egg carefully so that the egg shell is removed properly. Cut the eggplants carefully so that you get nice thick and long eggplant sticks. You may also use cooking spray to grease the pan and fries well.
