Fava Bean Hummus is a fresh and delicious twist on classic chickpea hummus. This super easy recipe, perfect for spring, is made with fresh fava beans, tahini sauce, extra virgin olive oil, garlic, lemon juice, and mint. Perfect as an appetizer or for brunch time, spread on fragrant bruschetta, it's also excellent as a filling for panini and sandwiches for a quick but super delicious lunch.

Making it is very simple: just shell and clean the fava beans, then blanch them for a few moments in salted water to keep them brightly colored. Place them in a bowl with the other ingredients and blend everything with an immersion blender until you obtain a smooth, thick, and homogeneous cream. All that's left to do is garnish with sesame seeds, a few mint leaves, a drizzle of raw olive oil, and some fresh fava beans, and you're done.

The end result is a flavorful, smooth green hummus, ideal for accompanying crudités, croutons, and triangles of warm focaccia.

Fava Beans Hummus Variations

If you like, you can replace the mint with basil, and sprinkle the top with a pinch of sweet paprika or cumin. For a more savory, bold flavor, add a tablespoon of grated pecorino cheese. If you like a spicy note, spice it up with a pinch of dried chili pepper or a little ground black pepper.

How to Clean Fava Beans

For optimal results, it's important to remove the tegument, or thin outer skin: it's edible and rich in fiber, but, especially if the legumes are large, it could give the hummus a slightly bitter aftertaste. As for the skin, you can reuse it for other delicious dishes. If broad beans are no longer in season, you can replace them with frozen ones.

How to Make Fava Beans Hummus

First, shell the beans.

Remove the outer skin and rinse the legumes under running water.

Pour the beans into boiling, lightly salted water and blanch them for 20-30 seconds.

Remove them with a slotted spoon and transfer them to a bowl and let them cool.

Add the oil, a pinch of salt, the lemon juice, the garlic, the mint leaves and the tahini sauce.

Blend with an immersion blender until you obtain a smooth and creamy mixture, then transfer the hummus to a clean container.

Garnish with sesame seeds, a few fresh mint leaves, a drizzle of extra virgin olive oil and a few raw broad beans, then bring to the table and enjoy!

Storage Instructions

Fava beans hummus can be stored in the refrigerator, tightly closed in an airtight container, for up to 3 days.
