Are your plain carrot sides getting a bit boring? These garlic butter roasted carrots are just the thing to get you enthusiastic about side dishes again!

Carrots are so full of nutrients that they are an essential part of a healthy diet, but finding interesting ways to serve them can be a bit of a chore.

Roasted carrots are delicious anyway, but adding garlic butter and chopped fresh parsley takes the taste to a new level – and they are so easy to make and cook.

INSTRUCTIONS

Preheat oven to 425F/200C fan/gas mark 7

Grease a deep-sided baking tray with butter, and set aside.

Cut up the carrots into large chunks, and melt the butter over medium heat in a large nonstick skillet or pan.

Add the garlic and cook on low heat for 3 minutes, or until lightly browned, stirring very frequently.

Keep the heat down low while cooking the garlic, in order not to burn it.

Toss the carrots in the garlic butter by adding them to the pan and making sure they are all coated in the butter.

Transfer carrots to the previously prepared baking sheet.

Arrange in one layer and bake for 22 to 30 minutes, or until carrots are tender and starting to turn golden.

Remove from oven and transfer to a serving plate.

Taste for seasoning and adjust accordingly.

Garnish with fresh chopped parsley or dill for a splash of contrasting colour and extra taste.
