In a bowl, mix: a cup of sifted flour, brown sugar, bicarbonate, cinnamon, ginger and a pinch of salt. Beat the egg and add it to the mixture. Then add the butter and mix until be homogenous. It is more practical to do this step with the mixer.
Sprinkle a little flour on a smooth surface and place the dough on top. Gradually add the remaining flour to the dough until that is not sticky. You can add a little more if necessary. Tighten the dough with a roller until it is half a centimeter thick.
