In a bowl, mix: a cup of sifted flour, brown sugar, bicarbonate, cinnamon, ginger and a pinch of salt. Beat the egg and add it to the mixture. Then add the butter and mix until be homogenous. It is more practical to do this step with the mixer.
Sprinkle a little flour on a smooth surface and place the dough on top. Gradually add the remaining flour to the dough until that is not sticky. You can add a little more if necessary. Tighten the dough with a roller until it is half a centimeter thick.

If you have a baking sheet, you can spread the dough over it and refrigerate for 20 minutes to cut it more easily. Cut the dough with molds and place them on a tray lined with baking paper. Place in preheated oven at 180 C for 15-20 minutes, until golden brown. Remove from oven and cool before serving.
