To make them, simply thinly slice pre-cooked beets, season them with extra virgin olive oil, a pinch of salt, and thyme, and bake them until crispy and golden brown. Low-calorie and healthy, they can be enjoyed as a satisfying snack any time of day, even while watching a good movie.

Seasoning Alternatives

You can replace the thyme with fresh rosemary, sage, marjoram, or other aromatic herbs of your choice, or add lime juice or your favorite spices. Smoked or hot paprika is excellent to enhance the natural sweetness of this versatile tuber.

You can use pre-cooked beets, as in our recipe, or raw ones: in the latter case, they will need to cook for at least twenty minutes longer.

How to Make Oven-Baked Beet Chips

Pat the beets dry with kitchen paper.

Place the beetroot on the mandolin set to a minimum thickness.

Slice the beetroot.

The slices must be very thin so that the chips will be crunchy.

Collect the beetroot slices in a bowl.

Pour the extra virgin olive oil.

Add salt.

Finally add the thyme.

Mix thoroughly with a spoon to flavor the beetroot slices well.

Arrange the beetroot slices on a baking tray lined with baking paper, trying not to overlap them.

Bake at 355°F/180°C in a preheated fan oven and cook for about 10-15 minutes, checking frequently to prevent them from burning. Alternatively, you can cook the beetroot chips in the air fryer or microwave.

Enjoy them piping hot and crunchy!

Storage Instructions

Beetroot chips are great freshly baked, otherwise you can store them in a paper bag for a day.
