Homemade Dark Chocolate Vegan Truffles

Dark Chocolate Vegan Truffles are  simple and delicious treats made with 100% plant-based ingredients: dried fruit, sugar, dark chocolate, bitter cocoa, and oat milk. Perfect for a snack or as a happy ending to a meal, they're super easy to make at home, and they're fun to make with the help of the little ones.

To serve, simply blend the hazelnuts and sugar until smooth and creamy, then add them to the melted chocolate and warmed milk. The creamy, smooth mixture is then refrigerated for at least a couple of hours. Then, take small portions and shape them into walnut-sized pralines, which you can then cover with bitter cocoa, chopped hazelnuts, or pistachios, as desired.

Alternatively, you can decorate the balls with flaked almonds or puffed rice, dip them in flaked coconut, or dip them in a small bowl of crumbled aquafaba meringues. Once ready, you can arrange the truffles in the dessert corner at a party buffet, or put them in a tin and offer them to friends and family as a delicious gourmet gift.

If you like, you can fill them with a whole hazelnut or a candied cherry. Instead of granulated sugar, you can use brown sugar; we used oat milk, but any other alternative will work just fine.

Ingredients

dark chocolate
300 grams
oat milk
150 ml
granulated sugar (or cane sugar)
100 grams
Shelled hazelnuts
100 grams
pistachio grains
to taste
Chopped hazelnuts
to taste
Bitter cocoa
to taste

How to Make Dark Chocolate Vegan Truffles

Collect the hazelnuts and granulated sugar in the mixer bowl.

Blend until you obtain a smooth and homogeneous paste.

Melt the chocolate in a bain-marie and add the hazelnut paste.

Always continuing to mix, pour in the warm vegetable milk in a thin stream.

Mix everything together carefully, then let the mixture cool.

Once it's cooled, place it in the refrigerator for at least 2 hours. After this time, it will be soft but moldable.

Distribute the dried fruit grains and cocoa into 3 bowls.

Take teaspoons of dough and form balls with moistened hands.

Cover each ball with a different decoration, passing them in chopped pistachios, hazelnuts or bitter cocoa powder.

Storage Instructions

Vegan truffles can be stored in the refrigerator, tightly closed in an airtight container or covered with cling film, for up to 3 days.
