The ice-cream biscuit is a classic summer dessert that you can also make at home with any type of biscuit filled with a good homemade ice-cream and dark chocolate. It is great for a snack and it is easily suitable to many variations. An ice-cream sandwich has 275 kcal per 100 grams.
For the ice-cream sandwich recipe, you have to prepare the mix in which the biscuits are soaked before filling them. Take a large container and put in it milk and bitter cocoa powder. Mix everything well until the cocoa melts.
Now take care of the filling of the ice-cream sandwich. Separate the yolks from the whites, with the latter you can prepare other desserts, such as meringues. Whip the egg yolks with the sugar. Separately whip the cream and add it to the mixture.
Mix everything gently, without using the electric mixer but with the whisks turned off and with movements that go from top to bottom and so on so as not to disassemble the mixture.
Add the chocolate drops and mix again. Now the cream is ready. Take a biscuit, soak it in the mix of milk and cocoa, stuff it with a little bit of cream spread well up to a few millimeters from the edges and cover it with another biscuit also soaked. Gently place each cookie on an aluminum container that you will put in the freezer covered with transparent film or aluminum foil.
How to prepare the dressing for the ice-cream sandwich
Let the sandwich rest in the freezer for about three hours or until the cookies have frozen. After this time, prepare the dressing; melt the dark chocolate in a bain-marie and place the coconut flour in a container. Take each ice-cream sandwich and soak it for one third in the dark chocolate, passing it immediately in the coconut flour.
Put the ice-cream sandwich in the aluminum container and then put everything in the freezer for a couple of hours or until the ice-creams are solidified.
If you have more time, the alternative is to prepare cookies without butter with a dough similar to that of shortcrust pastry to be used in the preparation of our ice-cream sandwich, which in this case will be light.
