These marinated mushrooms are tangy and savory with the addition of garlic. With their garlicky flavor, they are exceptional when added to sandwiches for lunch, but they can also be added to salads.

To make this marinated mushroom recipe, you boil quartered mushrooms in a mixture of vinegar, water, pepper, salt, and bay leaf until they are tender. Then, the mushrooms get strained before they are mixed with paprika, garlic, mint, parsley, salt, and pepper, and packed into jars. Finally, they are covered with oil which helps preserve them.

What are Marinated Mushrooms?

Marinated mushrooms are mushrooms that are cooked in a mixture of vinegar, water, and seasonings before they are packed in jars with oil. This particular recipe includes plenty of garlic, paprika, and herbs, which makes the mushrooms delicious on their own or in several different recipes. Whether you add them to sandwiches with meat, cheese, and arugula, or toss them into pasta salad, they will add an umami flavor taking those dishes over the top. They are also great added to charcuterie boards with an array of cured meat and cheeses.

Pro Tips

  • Both cremini and white mushrooms would work well in this recipe.
  • Thoroughly wash the mushrooms to ensure all of the dirt is off them before you use them in this recipe.
  • If desired, you can add other herbs to the mushrooms in place of the parsley and oregano. Fresh rosemary or thyme would both be delicious additions to this recipe.
  • If you like spicy food, you could add crushed red chili pepper to the mushrooms.

What to Serve with Marinated Mushrooms?

These marinated mushrooms make a wonderful addition to a charcuterie board with cheese, cured meat, olives, pickled vegetables, dried fruit, and nuts for an easy appetizer. Alternatively, you stuff them into sandwiches containing crusty bread, sliced salami, cheese, and arugula.

What Types of Mushrooms Should I Use?

The best types of mushrooms are ones that are smaller such as white mushrooms or cremini mushrooms. It is best to avoid larger mushrooms like portobello as they would require more chopping to make them bite-sized pieces.

Can I Add Other Ingredients to Marinated Mushrooms?

Yes, you definitely can! Feel free to add other herbs to the mushrooms such as dill, thyme, or rosemary. They would also be great with lemon zest, crushed red chili flakes, shallots or onions, or even some sugar if you would like your marinated mushrooms to be a little sweeter.

Can I Make Marinated Mushrooms Ahead?

Yes, you could! In fact, these marinated mushrooms will taste even better after they have marinated for a few days in oil in the fridge.
