Italian-Style Zucchini Fritters are a simple and tasty recipe, excellent as a starter or as an aperitif with creamy dips, these delicious appetizers are ready in just a few minutes by mixing grated zucchini with a thick batter made from eggs, milk, flour and grated cheeses.

Cooking Tips

  • Our version calls for baking the fritters in the oven, but if you prefer, you can also fry them in boiling seed oil. In this case, for a more airy and crispy result, we suggest replacing the milk with cold lager.
  • We used caciotta and parmesan, but you can also use fontina, emmental, pecorino, or another cheese of your choice. You can also flavor the fritters with your favorite spices and herbs.
  • For best results, remember to squeeze the grated zucchini well before adding them to the batter: this way you will get dry and crispy fritters.

How to Make Italian-Style Fritters

First trim the zucchini, then wash them and dry them with kitchen paper.

Pass the zucchini through a grater with large holes.

Collect the zucchini in a large bowl, add the salt and mix with a spoon, then let the vegetables rest for about 20 minutes.

Pass the caciotta through a grater with large holes.

Transfer the grated caciotta into a large bowl and add the eggs.

Add the grated Parmesan cheese.

Mix the ingredients with a spoon.

Add the sifted flour.

Pour the milk.

Mix everything well with a hand whisk until you obtain a creamy mixture without lumps, then let the prepared batter rest for half an hour.

Once the time has passed, add the well-squeezed grated zucchini to the batter and mix carefully.

Using a spoon, form small discs on a baking tray lined with baking paper, then place the fritters in a hot oven at 395°F/200°C and leave them to cook for about 15 minutes, taking care to turn them halfway through cooking so that they brown evenly.

Once ready, take the fritters out of the oven and arrange them on a serving plate and serve them immediately, hot and fragrant!
