Millionaire’s shortbread is a layered cake with whipped cream, soaked rusks, and a silky chocolate ganache on top. It’s rich, sweet, and slightly chewy with beautiful layers when you cut into it.
To make millionaire’s shortbread, you’ll need a glass baking dish (but don’t worry, this is a no-bake cake!). You’ll also need an electric mixer and a few basic ingredients, including rusks, eggs, sugar, milk, and chocolate ganache.

How to make Millionaire's Shortbread
First, in a baking dish, place enough rusks to line the bottom of the dish. Pour coconut milk over the rusks and let soak while you prepare the remaining steps in the recipe.
In a mixing bowl, combine the flour, salt and sugar. Add the milk and whisk in until combined. Add softened butter and whisk well.
Pour the milk and butter mixture over the rusks in the baking dish. Chill the dish in the fridge. Meanwhile, in a mixing bowl, beat the heavy cream with an electric mixer to make whipped cream. Spread the whipped cream over the top of the chilled cake in the baking dish.
Pour chocolate ganache over the whipped cream and spread flat with an offset spatula. Chill angina until the cake is fully set and the chocolate is dry. Slice and enjoy!
How to cut Millionaire's shortbread
Slice this shortbread only after it’s completely chilled through. The chocolate ganache on top should be hardened and matte, no longer shiny or wet. Then use a sharp knife and slice the cake into squares right in the baking dish.
How long does millionaire shortbread last?
If you don’t eat the whole cake right away, you can store the shortbread in the fridge for up to 4 days. Cover it well with plastic wrap. Do not store the cake on the counter, where it will spoil.
How to freeze millionaire shortbread
You can freeze the shortbread by simply wrapping the entire baking dish with several layers of plastic wrap and keeping in the freezer for up to three months. Let the cake defrost in the fridge overnight before serving chilled.
Place rusks as close to each other as possible, covering the whole bottom of a glass baking pan.
Pour coconut cream over just to cover the rusks up ½ way up, then set aside to soak.
Combine sugar, flour and vanilla. Start pouring in milk slowly to prevent lumps from forming.
Cook milk cream until thick and add butter in.
Pour the cream on top of the rusks and leave to set in the fridge.
Spread a layer of whipped cream on top and put it into a freezer. Pour hot milk over chocolate bits, let sit for a minute, then stir to make the ganache smooth.
Pour ganache over the chilled cream cake and let it set before slicing into squares.
