If you are a donut lover, then these donuts with pastry cream will likely become a favorite! They are incredibly fluffy baked donuts that are topped with chocolate chips and filled with a velvety pastry cream. The results are the most perfect donut to have as a decadent snack or enjoy as dessert after a meal.

To make the donuts, you first make a dough by combining flour with yeast, warm milk, warm water, sugar, vanilla, salt, and egg. Then, the entire dough is kneaded until it is smooth and elastic, before butter is added to impart richness. After that, the dough is set aside to double in size before being cut into donut shapes and allowed to rise again. To bake the donuts, they are brushed with egg and topped with chocolate chips before being baked in the oven. Filled with pastry cream, these make the most delicious dessert ever!

What are Donuts With Pastry Cream?

These donuts with pastry cream are baked donuts that are filled with pastry cream and topped with chocolate chips. While many baked donuts include a cake-based dough, these ones include a yeast-based dough which has tons of flavor from the fermentation time with the yeast.

These donuts are sliced in half horizontally, making it easy to pipe the pastry cream on top before sandwiching the top halves of the donuts on top. Dusted with powdered sugar and studded with chocolate chips, these donuts are as beautiful to look at as they are to eat!

Pro Tips

  • When making the dough, the best temperature to heat the milk and water to is between 100 F to 110 F (37.7 C to 43.3 C). This will ensure that the liquid is hot enough to activate the yeast while not being so hot that it will kill the yeast.
  • When kneading the dough, you will know it has been kneaded enough when it springs back easily when you press it with a finger. You can also test it out by stretching a small piece to see if you can get it thin enough to see through it without it tearing.
  • If you don’t have a round cutter for donuts, you could use a mason jar lid instead.
  • If you find that your dough isn’t rising very well, you may need to move it to a warmer location in your home.

What to Serve with Donuts With Pastry Cream?

Filled with cream and studded with chocolate chips, these donuts have all you need for a decadent treat! Simply serve them with coffee or tea, and a dusting of icing sugar for the most delicious dessert ever!

Why Isn’t My Donut Dough Rising?

If your donut dough isn’t rising, it may just be that your kitchen is a little on the cool side. In this case, you can move it to a warmer location in your home to see if it will start rising faster. You can also turn your oven into a proofing oven by heating it to the lowest possible temperature, turning it off, and placing the dough inside it to rise.

How Can I Tell the Dough is Kneaded Enough?

You will be able to tell you have kneaded your dough enough when it has a smooth and elastic texture. If you stretch a piece of it out very thinly, it shouldn’t easily break as well.

Can I Add Chocolate to the Pastry Cream?

Yes, if you would like to have a chocolate pastry cream in your donuts, you can add some cocoa powder to the pastry cream.

How to Store Donuts With Pastry Cream

These donuts can be stored in a sealed container in the fridge where they should stay fresh for a few days. While you could freeze the unfilled donuts, it isn’t ideal to freeze the assembled donuts as the pastry cream won’t hold up very well.
