Why Everyone Will Love This Recipe

The creamy tofu filling provides protein and a smooth texture, while zucchini and cherry tomatoes add freshness, sweetness, and visual appeal. The homemade pasta matta dough yields a tender, flaky crust that complements the creamy and roasted vegetables. This pie is satisfying, flavorful, and entirely plant-based, appealing to vegans, vegetarians, and anyone seeking a wholesome dinner option.

What Is Vegan Savory Pie?

Vegan Savory Pie is inspired by traditional European savory pies and quiches, but adapted to plant-based ingredients. Pasta matta dough, originating from French cuisine, is a thin, tender dough often used for pies and tarts. Tofu, a staple of East Asian cuisine for over 2,000 years, replaces dairy-based fillings like cheese and eggs while providing protein and creaminess. Zucchini and cherry tomatoes, common in Mediterranean cooking, add sweetness, color, and nutrients, making this pie a modern, balanced, and vegan-friendly take on classic savory pies.

Cooking Tips

  • Knead the pasta matta dough thoroughly until smooth and soft to ensure a flexible, easy-to-roll crust that will hold the filling.
  • Rest the dough at room temperature for 30 minutes to relax the gluten, which prevents shrinking during baking.
  • Sauté the vegetables briefly to enhance their flavor without overcooking, keeping a slight crunch that contrasts nicely with the creamy tofu.
  • Blend tofu with oat milk until smooth to create a silky, spreadable filling that sets well in the oven.
  • Roll the dough evenly and press into the pan carefully to avoid air pockets under the filling, which ensures even baking.
  • Prick the bottom of the dough with a fork to prevent bubbling and to maintain a flat base for the pie.
  • Bake until the top is lightly golden and the filling is set; allow it to cool slightly before slicing to maintain structure.

How to Make Vegan Savory Pie

Pour the flour into a bowl and make a well in the center. Add a pinch of salt, then pour in the oil and water.

Begin kneading the ingredients, gradually incorporating the flour into the liquids, first with a fork and then with your hands. Knead until the mixture is smooth, even, and non-sticky.

Cover with a tea towel and let rest at room temperature for 30 minutes.

Wash and dry the zucchini and cherry tomatoes. Trim the zucchini and cut them into medium-thin rounds using a mandolin.

Cut the cherry tomatoes in half.

In a nonstick pan, heat a drizzle of extra virgin olive oil with the garlic clove. Add the vegetables, season with salt, and sauté over high heat for about 2 minutes, just long enough to flavor them. Remove from heat and set aside.

Cut the tofu into cubes and add it to the blender together with the oat milk.

Blend until you get a smooth cream.

Take the dough and roll it out quite thinly.

Line a 24cm round cake tin with baking paper and place the pastry inside, making sure it adheres well to the base and edges.

Remove the excess and prick the bottom with a fork.

Stuff the pasta shell with the tofu cream, then evenly distribute the vegetables. If desired, add thyme or other herbs to taste.

Fold the edges inwards and cook in a preheated static oven at 355°F/180°C for about 45 minutes.

Once cooked, let it cool in the mold, then transfer it to a serving plate, slice and serve. Enjoy!
