- White rum 6 ounces
- cream of coconut 6 ounces (Coco Lopez brand if available) *
- Pineapple juice 6 ounces
- pineapple chunks 1/2 cup frozen
- Ice 4 cups
- golden or añejo rum 4 ounces

The classic cocktail is a heavenly combination of white rum, pineapple, coconut cream, crushed ice, and golden rum to top it off.
It’s so easy and quick to make, and the only equipment you’ll need is a blender and a couple of cocktail glasses. Enjoy!
Place the white rum, coconut cream, pineapple juice and chunks, and ice in a blender, and process until everything is smooth and blended.
You’ll probably need to stop few times and use a spatula to move the mixture around to ensure even blending
Pour or spoon into glasses and top with and top with the golden rum – this should float on top.
Garnish with fresh pineapple if desired, and add a cocktail umbrella for the final touch!
* Coco Lopez brand cream of coconut is available on Amazon in the UK. Don’t use creamed coconut or coconut milk for this recipe – it has to be cream of coconut.
