Pumpkin fritters: a delicious and healthy breakfast recipe

This recipe of pumpkin fritters is the easiest version to savor the sweet and salty flavors of everyone’s favorite breakfast preparation. You may choose to either deep fry the fritter batter to get an even crispier version or stick to the one recommended for a “healthier” option.

These fritters are crisp on the outside and soft and mushy inside, which makes it a hot favorite amongst toddlers and children.

Instructions

Roughly grate the peeled pumpkin in to a large bowl. Carefully crack open the eggs over the grated pumpkin.

Add the garlic, chopped basil, flour, parmesan cheese to the pumpkin, and mix everything well until evenly combined. Season the fritter batter with salt and black pepper powder.

Again mix the batter until it is smooth in consistency. Heat a non-stick pan and add olive oil to it. Add a small ladleful of batter to the hot pan at a distance of about 2 inches from one another.

Cook the fritters for 2 minutes or until the edges start to cook and then flip it and cook on the other side again for 2 minutes.

Flip the fritters again and cook until they turn golden brown in color on both sides. Repeat the process with the remaining batter. Serve the hot pumpkin fritters and enjoy!

You may alternatively use canned pumpkin, just drain them before use. Alternatively, you may squeeze out water from the grated pumpkin and continue with the recipe to get an even crisper fritter. You may also chop the pumpkin in to small cubes and cook them with a little water until they are soft and tender. Drain out the pumpkin pulp and mash it before using it in the recipe as mentioned. Make sure that you carefully remove the egg shells while you break the egg. A wiser technique would be to break the egg in a separate bowl first and then use that broken egg for the recipe. You may also prepare the batter in advance and make the fritters when you plan to serve them.
