Quindim: the popular Brazilian dessert recipe

Quindim is the traditional Brazilian dessert that you will easily find at every corner of this Latin American country. Quindim is as beautiful and as brightly colored as the Brazilian culture.

The glossy surface of quindim is so inviting that you won’t be able to resist preparing this Brazilian flan! You may serve quindim as such or top with a few fresh fruits of your choice.

Instructions

In a large bowl add the shredded coconut. Pour the coconut milk over the coconut shreds and mix the 2 ingredients well. Let this mixture stand for 5 minutes. Meanwhile, in another bowl add the sugar, butter and whisk the 2 ingredients until light and fluffy in texture.

Add the coconut mixture, egg yolks to the beaten sugar mix and blend everything again for 2 minutes. Preheat the oven to 175 degrees C. Lightly grease the ramekins with olive oil generously at the base and on the sides. Now, equally cover the bottom and edges of the greased ramekins from inside with 2 tablespoons of granulated white sugar. Equally pour the mixture in to the molds and let it stand for 5 minutes at room temperature.

Take a large bowl and fill it slightly with water. Place the ramekin molds in to the water bath and bake it for about 50 minutes. Cool the quindim before unmolding. Serve and enjoy!

Tips

You may serve the quindim turned upside down, as done traditionally, to show the glossy top and let the lovely brown crust stay at the bottom. Make sure you move your hands in only one direction while you whisk or blend the ingredients. In case you use hand blender/whisk, again make sure that the gadget moves in one circular direction only. Maintain the baking temperature and you might need to keep a watch on the quindim in the final minutes of baking. Do not over mix the batter.
