This chocolate is a layered treat with a soft cocoa sponge, silky ricotta-chocolate cream, homemade caramel, and a crisp chocolate-peanut coating. It’s perfect for birthdays, dinner parties, or celebrations. The ricotta-based cream keeps the filling smooth without making the cake feel overwhelmingly heavy, and the peanut chocolate coating adds a contrast to the soft layers underneath.

What Is Chocolate Caramel Cake?

Chocolate caramel cake is a dessert built around two of the most popular sweet flavors in the baking world, which are cocoa-rich chocolate and caramelized sugar. The pairing works because chocolate brings depth and slight bitterness, while caramel contributes a toasted, sugary flavour. Together, they prevent either component from tasting one-dimensional.

Pro Tips for the Best Chocolate Caramel Cake

  • Sift the dry ingredients, as cocoa powder and flour can form stubborn little lumps, especially when mixed directly into wet ingredients.
  • Sugar can go from pale to seriously dark surprisingly quickly. Keep a close eye on it as it melts and caramelizes, and remove it from excessive heat once it reaches a rich amber colour.
  • Ricotta blends more easily when it is not refrigerator-cold. This helps create a smoother filling and reduces the chance of a lumpy cream.
  • Hot caramel can loosen the cream and make the layers difficult to control. It should be thick enough to spread without running everywhere.

Frequently Asked Questions

What Type of Chocolate Should I Use?

Dark or semi-sweet chocolate works because the caramel and powdered sugar already contribute plenty of sweetness. Whichever chocolate you choose, use one with a flavour you like because it appears in both the cream and coating.

Why Did My Caramel Become Hard?

Caramel can harden when it cools, especially if it has been cooked for too long or reaches a higher temperature than intended. If the caramel becomes too firm to spread, gently warm it again while stirring until it reaches a workable consistency.

Can I Leave Out the Peanuts?

The peanuts provide crunch and a nutty flavor, but they are not essential to the structure of the cake. You can simply spread the chocolate coating over the cake without adding nuts.

Can I Freeze Chocolate Caramel Cake?

The cake can be frozen, but freezing can affect the ricotta and whipped cream filling. If you do freeze it, wrap it securely and place it in an airtight container to protect it from freezer burn and unwanted odours.

How to Store Any Leftovers

Because the filling contains ricotta and whipping cream, refrigeration is important for both quality and food safety. The cake is best enjoyed within a few days while the sponge, cream, and caramel still taste fresh.

How to Make Chocolate Caramel Cake

In a bowl, mix eggs, sugar, and salt. Sift in the flour, cocoa powder, and cornstarch, and mix again.

Transfer the batter into your prepared cake pan, smooth the surface, and bake for 25 minutes at 180°C (350°F).

Place the sugar in a saucepan over medium heat and allow it to melt and caramelize. Once the sugar has caramelized, add the butter and warm whipping cream.

In another bowl, combine the ricotta cheese and powdered sugar. Add the whipping cream and continue mixing until the filling thickens. Finally, mix in the melted chocolate.

Once the sponge has cooled, cut it horizontally into two layers. Then use the prepared cream to create a border around one layer and fill it with the caramel.

Cover the caramel with the rest of your prepared cream.

Place the second sponge layer on top.

Melt the chocolate and mix with 1tsp of oil and peanuts.

Now spread the chocolate-peanut mixture over the assembled cake, covering the top and sides. Place the finished cake in the fridge for at least 1 hour.

Cut the cake into portions and serve. Enjoy!
