Salt & Straw, the Portland-based ice cream company known for its inventive flavors, has partnered with Taco Bell to launch the Tacolate, a limited-edition ice cream that fuses the bold, savory essence of Taco Bell with Salt & Straw’s signature creamy indulgence. Available now through October 31 on Salt & Straw’s website and in scoop shops, the Tacolate is a daring dessert designed to celebrate the unexpected—and it’s already stirring up buzz across food media and social platforms.

What’s in the Tacolate?

The Tacolate is a an ancho chili cinnamon ice cream, tucked into a sweet taco shell made from crunchy waffle cones, dipped in chocolate and topped with toasted brown rice and quinoa, creating a layered flavor profile that’s smoky, sweet, and slightly salty. It’s finished with two different sweet reimagined Taco Bell sauce packets: Mango Jalapeno Sauce and Wildberry Cinnamon Sauce.

Salt & Straw co-founder Tyler Malek described the flavor as “a love letter to late-night cravings,” blending the comfort of chocolate with the crunch and spice of Taco Bell’s most iconic ingredients. The result is a scoop that’s rich, complex, and surprisingly balanced.

The Tacolate is available in Salt & Straw scoop shops across the West Coast and for nationwide shipping via the brand’s website. It’s sold in pints and priced at $13, with limited quantities expected to sell out before Halloween. It's already sold out online, so you have to check for its availability in your local shops.
