Ingredients

ricotta cheese
200 grams
sliced mortadella
100 grams
Grated parmesan cheese
3 tbsps
pistachio grains
80 grams
walnut kernels
80 grams
poppy seeds (or sesame)

How to Make Savory Ricotta Truffles

Finely chop the mortadella with a knife or chopper.

Pour the ricotta and parmesan into a bowl.

Mix with a spoon.

Add the chopped mortadella.

Mix again to combine everything well.

Salt rule and season with a pinch of pepper.

Take a teaspoon of dough at a time and form many balls.

Roll some balls in the chopped pistachios.

Continue in this way passing the balls in the chopped walnuts and poppy seeds.

What Ricotta Should You Use?

Depending on your personal taste, you can use either cow's or sheep's ricotta, as long as it's very fresh, artisanally made with only whey and free of additives. For optimal results, let it drain in its basket for at least a couple of hours; the mixture should be firm and compact.

You can replace the Parmesan with pecorino for a bolder flavor. You can also use robiola instead of ricotta and flavor the mixture with chopped herbs or chili powder.
