Soft and Flavorful Mandarin Cake

Soft Mandarin Cake is a soft and fragrant dessert, made with a light dough and no butter. It's very quick and easy to make, similar to the more famous orange bread: just wash the mandarins thoroughly, strictly organic and untreated, cut them into segments, place them in a blender, and puree.

The resulting puree is mixed with sifted sugar, eggs, milk, seed oil, flour, and baking powder. It is mixed quickly with a hand whisk, poured into a mold lined with parchment paper, and then baked.

The end result will be a soft, moist, and fragrant cake, perfect for enjoying during the winter months. Excellent for breakfast or as a snack, simply dusted with powdered sugar and paired with your favorite beverage, it will delight both adults and children.

How to Make Soft Mandarin Cake

Wash the mandarins thoroughly under cold running water.

Cut them into wedges, leaving the peel on.

Remove the seeds.

Collect the mandarins in a food processor.

Blend the mandarins until you obtain a coarse puree.

Pour the sugar.

Combine the eggs.

Blend all the ingredients.

Pour the mixture into a large container.

Add the oil.

Pour in the milk.

Sift the flour directly into the bowl.

Also add the sifted yeast.

Mix all the ingredients well with a hand whisk.

Pour the mixture into a 24cm diameter cake tin lined with baking paper.

Bake the cake in the oven at 350°F/180°C, in static mode, for 45 minutes.

Remove the cake from the oven and let it cool completely.

Take it out of the mold and place it on a serving plate.

Sprinkle the surface with powdered sugar.

Cooking Tips

  • To prepare this dessert, use organic mandarins with very thin, untreated peel: clementines are ideal because they are sweeter and juicier.
  • If you prefer a less bitter taste, you can still remove the peel from the fruit.
  • You can enrich the mandarin cake dough with chocolate chips, raisins, or coarsely chopped dried fruit of your choice; you can also add spices, such as cinnamon, vanilla, or cardamom.
  • The mandarin cake can also be decorated with chocolate icing, to make it even more delicious.

How to Store Any Leftovers

Mandarin cake can be stored for 3 days at room temperature under a glass bell jar or in an airtight container.
