- Fresh cream 270 ml
- Icing sugar 110 grams
- Strawberries 300 gr
- Jelly 8 grams
Strawberry mousse is a delicious and refreshing dessert made from strawberries and cream. It is a recipe without cooking, quick and easy to prepare and it looks like a perfect and delicious end of meal.
How to prepare strawberry mousse
Soak the jelly sheets in cold water for about 10 minutes. Wash and dry the strawberries (1). Remove the stalk and put them in the kitchen chopper until you get a ruby-colored strawberry puree (2). Put in a saucepan a little cream and the jelly over low heat (3) until the jelly has completely dissolved.
Add the strawberry puree and the icing sugar, sieved with a colander, to the cream with the jelly (4). In a large bowl, whip the remaining cream with the help of an electric whisk (5). Let the puree cool, add it to the whipped cream and mix gently. Pour the mousse into the bowls you have chosen to serve, cover them with cling film (6) and put them in the refrigerator for at least four hours. Remove the strawberry mousse from the refrigerator to serve and decorate with thinly cut strawberries.
Strawberries can be combined with fruits, such as apricots, and citrus fruits, such as lemons, to have special mousses but the most particular variants are the vegan one, the Italian one, with chocolate or with mascarpone. Let's see them, one by one.
Vegan strawberry mousse
Vegan strawberry mousse is a delicious and fresh variant with soy cream to be whipped instead of fresh cream. For the preparation, follow the same procedure and the same doses of the recipe above. Make sure that the cream is not already sweetened and in this case reduce the sugar doses. Instead of jelly, you can use agar agar or pectin. A version of the lactose-free strawberry mousse perfect and delicious for all your guests.
Italian meringue mousse
The one with Italian meringue is a strawberry mousse excellent for filling a cake but you will need a kitchen thermometer to precisely measure the temperature of the sugar. Dissolve 100 grams of granulated sugar in a saucepan. Check the temperature constantly. When it reaches 121 degrees, add the sugar to the beaten egg whites (90 grams of egg whites) while continuing to work with the electric whisk. Continue whipping the egg whites until completely cooled. The procedure for the mousse is identical to the recipe above, however, simply add the Italian meringue first and then the cream.
Chocolate and strawberry mousse
Chocolate and strawberry mousse is a very fresh and delicious dessert with a heart of strawberry sauce. To prepare it, blend the strawberries until you get a thick and homogeneous cream and follow the rules of our basic recipe. When serving, add white and dark chocolate flakes and some strawberries to decorate.
Mascarpone mousse with strawberries
A very delicious mousse that combines two fundamental ingredients of the typical dessert: mascarpone and strawberries. The preparation of the recipe is similar to that of the classic strawberry mousse but you just have to be careful to mix all the ingredients well.
The strawberry mousse can be preserved well in the refrigerator for at least 4 days, cover it with plastic wrap and if the dimensions allow it, close it in a tupperware. It is not recommend freezing it because during the thawing phase too much water could be produced and ruin the mousse.
