The sweet apple omelette is a typical recipe of the Austrian and South Tyrolean tradition. Also known as Apfelschmarren, it is a sort of omelette with apples rich in sugar and cooked directly in a pan. It is generally served for breakfast, because it is full of energy and nutrients, but it is also ideal for a snack or to be served at a buffet for children's parties.

The apple omelette is prepared in no time and just a few simple ingredients are needed, just milk, eggs, flour, a pinch of salt and apples cut into thin slices. The result is a delicious omelette to be served with fresh fruit, jams or maple syrup. If you are curious to try this delicious South Tyrolean recipe, here's how to prepare the sweet apple omelette.

How to prepare the sweet apple omelette

In a bowl, mix the flour with the milk, cream and egg yolks (1). Stir to obtain a homogeneous mixture.

In a separate bowl, beat the egg whites until stiff with electric whisk, adding the sugar little by little (2). Finally mix with the rest of the mixture, mixing gently with a spatula from top to bottom.

Wash the apples and cut them into thin slices of about the same thickness (3). Heat a non-stick pan greased with olive oil.

Pour the mixture (4), then add the apple slices evenly. Let cook for a few minutes (5), then turn the omelette with the help of a plate.

At the end of cooking, crumble the omelette with a fork, sprinkle with icing sugar and sauté a couple of minutes with a knob of butter to lightly caramelize the icing sugar. Serve by spraying more sugar (6).

Eat the sweet apple omelette hot and freshly made. Anyway you can preserve it up to the next day closed in an airtight container and heat it slightly in a pan or in the oven.
