Also known as Apfelschmarren, it is a sort of omelette with apples rich in sugar and cooked directly in a pan. How to prepare the sweet apple omelette

In a bowl, mix the flour with the milk, cream and egg yolks (1). Stir to obtain a homogeneous mixture.

In a separate bowl, beat the egg whites until stiff with electric whisk, adding the sugar little by little (2). Finally mix with the rest of the mixture, mixing gently with a spatula from top to bottom.

Wash the apples and cut them into thin slices of about the same thickness (3). Heat a non-stick pan greased with olive oil.

Pour the mixture (4), then add the apple slices evenly. Let cook for a few minutes (5), then turn the omelette with the help of a plate.

At the end of cooking, crumble the omelette with a fork, sprinkle with icing sugar and sauté a couple of minutes with a knob of butter to lightly caramelize the icing sugar. Serve by spraying more sugar (6).
