These Sweet Ricotta Snowmen are no-bake treats, shaped in a fun and playful way like snowmen, that will delight both adults and children. Perfect for serving during the holiday season at the end of a meal or as a snack, they're made in just a few simple steps with fresh ricotta, grated coconut, powdered sugar, and lemon zest.

Making them at home is incredibly simple: the only thing to remember is to thoroughly drain the whey from the ricotta using a fine-mesh strainer, resulting in dry, compact treats. Once drained, simply mash the ricotta into a creamy consistency with the prongs of a fork, then combine it in a bowl with the remaining ingredients. From the smooth mixture, form several walnut-sized balls, followed by several slightly larger ones: these will serve as the heads and bodies of the dolls, respectively.

At this point, simply roll the pralines in flaked coconut, then stack them on top of each other and decorate them as desired with meringues, chocolate chips, a piece of carrot, colored sugar sprinkles, and gummy candies: this will create the snowmen's hat, eyes, nose, buttons, and scarf. The result will be a delicious and spectacular dessert, ideal for a sweet table alongside brownie trees, reindeer cookies , and gingerbread cookies.

How to Make Sweet Ricotta Snowmen

Collect the ricotta, well drained from the whey, in a bowl and reduce it to a cream with the prongs of a fork.

Add the coconut flakes.

Continue with the icing sugar and flavor with the grated lemon zest.

Mix the ingredients well until you get a smooth mixture.

Shape many balls the size of a walnut and as many slightly larger ones: you will need them to make the heads and bodies of the snowmen.

Roll the resulting bonbons in flaked coconut.

Arrange the larger balls on a tray and overlap the smaller ones.

Make snowman buttons with colorful chocolate-filled sprinkles.

Make the hat, eyes and scarf of the puppets with colored meringues, dark chocolate chips and gummy candies.

Make a nose with a small piece of carrot; then bring the sweet snowmen to the table and serve.

Sweet Ricotta Snowmen Variations

Instead of the grated lemon zest, you can use a pinch of cinnamon or a few drops of vanilla extract, you can enrich the mixture with a teaspoon of bitter cocoa powder and crumbled dry biscuits, or you can choose multicolored sprinkles and small sugar paste decorations for the finish.
