Syrniki: the easy recipe for Russian pancakes

Cottage cheese
100g non-fat, drained
whole egg

Canola oil

Powdered white sugar

This recipe of the Russian style pancakes is very filling. In mere 15 minutes, you will get really very light and soft textured pancakes that are way more nutritious than the regular ones we are used to eating. Top it with the traditional topping of jams, and preserves or drizzle with your favorite fruit syrup to relish it in the best way possible.

In fact, you may prepare miniature sized pancakes with the same batter and serve it with some whipped cream and ice cream as an instant dessert! This recipe is a great cheat dish to feed humungous portions of proteins to the little ones at home. So, don’t wait up any more and start gathering the ingredients for this delicious breakfast preparation.

Instructions

In a large bowl, crumble or grate the cottage cheese. Crack open the egg carefully over the cheese and add canola oil, powdered white sugar, flour, baking powder, vanilla, and mix everything until well combined.

A sticky mixture will be formed. Add a tablespoon more flour if the batter is too runny. Heat olive oil in a non stick pan on medium flame. Add a tablespoon of the stick pancake batter in to the ¼ cup of flour and handle it very gently to coat the dough with flour evenly.

Lightly flatten the dough and then lift it carefully. Transfer the coated dough in to the hot oil and turn the heat to low. Repeat with the remaining mixture and then cook the fritters on high heat until lightly brown on both sides.

Transfer the fritters on to the serving plate. Dust with icing sugar and serve with jam, syrup, crème fraiche, or preserve of your choice!

Tips

You will have to grease the pan just once at the beginning of preparing the pancakes. Add the flour used for coating on to a flat plate for ease of handling the dough. You may also add dark chocolate chips, blueberries, or chopped banana and strawberries to make different versions of the basic pancakes.
