Italian focaccia bread is very simple to prepare, you will just need a few ingredients: brewer’s yeast or sourdough starter, water, extra virgin olive oil, salt and a bit of sugar. Once the dough is prepared it will have to rise until it has doubled the volume, it will then be spread in a pan with the addition of oil. It is in this phase that the second leavening takes place: the pan will be covered with a cloth until the dough doubles. After the necessary time, it will then be baked in the oven for about half an hour: it must be soft on the inside and crunchy on the outside. You can then enjoy it alone, accompanied by a beer, or served with cold cuts and cheeses, also very good for a picnic.

How to prepare the Italian focaccia bread

Put the brewer's yeast in a large bowl with warm water, a bit of oil and a pinch of sugar, work with your hands until the brewer’s yeast dissolves. Now add the flour and a bit of salt (1) and continue stirring until the mixture is smooth and homogeneous, but it must not be sticky. Cover the dough with a clean cotton cloth and let it rest for about 2 hours or until it has doubled its volume. (2) After the necessary time, pour the dough into a oil-coated baking tray or lined with parchment paper . (3)

Grease your hands with the oil and gently roll out the dough. (4) Now cover with a cotton cloth and let it rise again until the mixture doubles the volume. Then add a drizzle of oil and coarse salt over the whole mixture (5) and bake in a preheated oven at 250° for 30 minutes, until the surface is golden brown. Once ready let it cool and cut it. Tips

If you want to use sourdough starter instead of brewer’s yeast you will have to use 125 grams of it. In this case, then, the leavening times will increase: it will take 4 to 6 hours for the leavening. The recipe process remains the same.

Those who prefer can prepare a fried Italian focaccia bread: once the dough has grown, divide it into many punch-sized balls and roll them out with a rolling pin, making small discs. Now fry them in hot oil until golden brown. Drain and serve accompanied with cold cuts.

For the preparation of the Italian focaccia bread, always use the type 0 flour, which gives it a good consistency.

Variants

You can prepare a tasty variant just adding 250 grams of bacon to the recipe. Sauté it and, when it has lost the fat, let it cool. In a bowl put the flour, add the bacon with its melted fat, add salt and pepper and knead. Then add the brewer's yeast previously dissolved in warm water and mix all the ingredients until forming a stick. Wrap it in a cotton cloth and let it rise for at least 2 hours. Bake at 180 degrees for an hour and serve the Italian focaccia bread warm or cold in slices.
