These charming Italian-inspired pastries are made from soft lemon-scented dough, filled with a smooth homemade lemon cream.

The recipe has a few stages, but none of them are difficult once you take them one at a time. First, you’ll make a simple lemon dough and give it an hour in the refrigerator to settle down. While it rests, the lemon cream gets cooked until thick and smooth. Then the dough is shaped into small rounds, baked, hollowed slightly, and filled with the cream. Two halves become one little lemon, and there is the final dip in yellow-tinted limoncello syrup followed by sugar. They’re lovely for afternoon tea, birthdays, and spring gatherings.

What Are Sweet Lemons?

Sweet Lemons, known in Italian as limoni dolci, are playful little pastries inspired by the tradition of ”pesche dolci”, or “sweet peaches.” Instead of being shaped and coloured like peaches, this lemon version takes the same basic idea and gives it a distinctly citrusy makeover.

Pro Tips for the Best Sweet Lemons

  • That hour in the refrigerator is not just a suggestion for filling time while you scroll through your phone. Chilling helps the dough become easier to handle and shape.
  • The pastries only need around 15 minutes at 180°C/360°F. Keep an eye on them and avoid letting them become too dark. The goal is a tender pastry that can be filled and joined together easily.
  • Stir the cream constantly, particularly around the bottom and corners of the pan. Custard has a surprisingly strong commitment to forming lumps when nobody is watching.
  • The pastries only need a quick dip in the limoncello syrup. A long soak can make the outside too wet and may cause the pastry to become fragile.

Frequently Asked Questions

Can I Make Sweet Lemons Without Limoncello?

Yes, you can make the pastries without alcohol if necessary. Replace the limoncello in the syrup with additional water and lemon juice, adjusting the amount of lemon juice gradually so the syrup does not become excessively tart.

Why Does My Lemon Cream Have Lumps?

Lumps usually appear when the mixture heats unevenly or is not stirred continuously. Cornstarch thickens quickly, so the cream needs regular attention once it starts warming. Also, make sure the egg yolks, sugar, lemon juice, and cornstarch are thoroughly combined before adding the milk and cream.

Why Are My Sweet Lemons Cracking?

Cracking can happen if the dough is too dry, the balls are unevenly shaped, or the pastries have been baked for too long. Start by checking your flour measurement. Adding considerably more flour than the recipe calls for can produce a stiff dough that struggles to expand evenly.

How to Store Any Leftovers

Because the pastries contain a cooked egg-and-dairy lemon cream, store them in the refrigerator. The sugar coating may gradually absorb some moisture from the syrup and cream, so the exterior can become softer over time, so enjoy the sweet lemons within a few days.

How to Make Sweet Lemons

Add the egg and sugar to a mixing bowl and beat them with an electric mixer until the mixture becomes light and fluffy.

Add the zest of one lemon, followed by the vegetable oil and milk, and mix. Sift in the all-purpose flour and baking powder while mixing until you have a smooth dough. Then, wrap it and place it in the fridge for one hour.

In a bowl, whisk together the egg yolks, sugar, lemon zest, lemon juice, and cornstarch. Then add the heavy cream and milk and mix.

Transfer the cream mixture to a saucepan and cook it over low heat, stirring constantly until the mixture thickens.

Heat water and sugar in a saucepan. Remove the saucepan from the heat and stir in the limoncello.

Take the chilled dough from the refrigerator, divide it into small portions, and shape each portion to resemble half of a lemon.

Place them on a baking sheet and bake at 180°C/360°F for about 15 minutes.

Carve out a small hole in the bottom of each pastry.

Dip them into the yellow limoncello syrup and pipe the cream into the openings you created.

Take two filled pastry halves and press them together to create one lemon shape. Add a small amount of yellow food colouring to the prepared limoncello syrup and briefly dip each assembled pastry again into the syrup.

Roll each dipped pastry in sugar.

Decorate with mint leaves and enjoy!
