Vanilla cake is a very soft dessert perfect for breakfast or as a snack; it will be loved by adults and children. A fragrant cake with a delicate flavor, to be prepared with a few simple ingredients that we all have in the pantry: eggs, sugar, flour, butter, baking powder and vanilla pod. Once ready, simply taste it with a sprinkling of icing sugar, or accompanied with creams, fruit and jam: it will remain soft for at least 3 days. Here's how to prepare it to delight the whole family.
How to prepare the vanilla cake
Divide the egg yolks from the egg whites. Melt the butter in the pan, or in a water bath, and set aside. Beat the egg whites until stiff (1). Separately, work the egg yolks with the sugar: whip them with the electric whisk until the mixture is light and frothy. Cut the vanilla pod with a small knife (2), extract the seeds and add them to the mixture. Also add the melted butter, now cold, then stir. Add the sifted flour and baking powder, stirring constantly (3). Finally add the egg whites mixing them with a spatula and with movements from the bottom upwards, so as not to “break” them.
Pour the mixture into a 22 cm diameter mold previously buttered and floured (4) and bake in a preheated oven at 180° degrees C for about 45 minutes; then always do the toothpick test to ensure that the cake is cooked also inside. Once ready, let it cool (5) and then sprinkle it with icing sugar. Your vanilla cake is ready to be enjoyed (6).
If you want to prepare a very light and soft vanilla cake you can replace the butter with the oil; for every 100 grams of butter you will have to use instead 80 grams of oil.
You can replace the vanilla pod with a sachet of vanillin or with vanilla extract: a teaspoon will be enough.
