- Zucchini 1 large, grated

This recipe of crispy zucchini fritters is really very flavorful and caters to the exclusive vegan style of eating. You don’t even need any extra liquid or water to make the batter as zucchini itself has high water content. This is why many cakes and brownies recipe using zucchini turns out extremely moist and soft. Similarly, the fritters in this recipe will also turn out soft inside and crispy outside!
Add salt to the grated zucchini and keep it aside for 10 minutes. Squeeze out excess water from the salted zucchini and then transfer it into a dry bowl.
Add flour, vegan parmesan or nutritional yeast, baking powder, garlic, and spring onion to the zucchini. Add melted butter to the mixture and stir everything well until the mixture is thick and well blended. Heat a non-stick pan and spread some oil evenly all over the cooking surface of the pan.
Add heaped tablespoons of the zucchini batter all around the pan at some distance from each other. Cook the fritters until light brown in color on both sides. Serve hot with any vegan dip of your choice and enjoy!!
Cook the fritters on medium heat and press them with the back side of a spatula to cook it well from inside.
