This technique isn't the result of some recent trend but rather a way to obtain a product with specific properties, such as good toughness and extensibility, a certain capacity to absorb water, and more complex flavors. Let's look in detail at why you should combine two or more flours together and what to look for.

Forces That Combine

This isn't the first time we've discussed flour strength (W)—that is, the dough's ability to develop gluten, absorb water, and retain leavening gases, resisting deformationnor the relationship between tenacity and extensibility (P/L). A strong flour generally contains more protein and is able to create a resistant gluten network, capable of retaining leavening gases and suitable for long fermentations. All of this, in practical terms, translates into a dough that's more workable and better able to retain leavening gases more uniformly, resulting in a product with a more regular structure and a better consistency. Furthermore, flours are composed of starches, fibers, and enzymes, which vary according to the type and also react differently. Some types of starch, for example, absorb more water and promote fermentation, but fibers can slow it down or alter the structure of the gluten: blends, therefore, allow you to adjust hydration, leavening times, and dough stability.

There's no single answer; it all depends on the type of result you're aiming for. For example, for a highly hydrated pizza, you can create a blend of a strong and a medium flour, to support the structure during leavening and baking, while maintaining good workability when rolling out. Or, if you want to try your hand at making ciabatta, you can combine a strong and a medium flour with a percentage of semolina, to enhance the flavor and crispiness of the crust, always remembering to balance the hydration. In any case, the secret lies in doing small experiments, each time noting the percentages of the various flours used, the water used, and the maturation and leavening times, observing how the dough reacts. Only in this way will you be able to create increasingly precise blends and achieve exactly the result you desire.
