Instructions:

Preheat the oven to 175 degrees C and line a baking tray with a greased butter paper. In a large bowl, beat the powdered white sugar, brown sugar, and butter until the mixture is light and fluffy in texture.

Crack open the egg over the sugar mixture and add yogurt and vanilla essence to it. Again, beat the mixture well until it is fluffy in texture.

Add the flour, salt, baking soda, and cinnamon to it and whisk it lightly for a minute. Stir in the oats chocolate chips, zucchini and mix everything well. Add a heaped tablespoon of the cookie batter on to the prepared baking tray at a distance of 2 inches apart from one another.

Bake the cookies for about 10 to 12 minutes or until it is thoroughly cooked. Repeat with the remaining mixture until all the batter is used up. Cool the freshly baked cookies, serve, and enjoy!

Tips

Make sure that you beat the batter well enough. Crack open the egg carefully in to the bowl so that no eggshells are accidentally added to the cookie batter.
