Baked carrots are a delicious and very light side dish, very good also for those who follow a vegetarian or low-calorie diet. Crispy carrot sticks seasoned with garlic or onion and flavored with aromatic herbs such as chives, thyme, sage, oregano or parsley, as in our recipe. Baked carrots are the best preparation to accompany meat, fish or vegetarian dishes and are excellent both hot and at room temperature, the important thing is that they are tasty and crunchy. So let's see how to prepare them in a short time to create a simple and tasty side dish.
Wash the carrots, remove the ends and peel them with a potato peeler. (1) Now cut them in half lengthwise and then cut into sticks.
Place the carrots well spaced in a pan lined with parchment paper, add the garlic, whole or into cloves, as you prefer, the oil and salt and stir to flavor.
Halfway through cooking add the chopped parsley. (2) Cook in a preheated oven at 200 ° for 30/40 minutes, turning them at least a couple of times. Your baked carrots are ready to be served. (3)
If you do not like the taste of garlic you can use the shallot that will give your baked carrots a more delicate taste.
For the baking just prefer the traditional oven and not the ventilated oven, turning on the resistance on both the lower and upper part.
For a super fast side dish you can also prepare carrots in a pan, very simple to make and really tasty.
If you want to vary the preparation and make your carrots even tastier, you can prepare the baked carrots with cheese. Cut the carrots into sticks or into slices, sauté in a pan with oil, garlic and sage, or an aromatic herb of your choice, add salt and cook for 5 minutes. Place the carrots in a baking dish and alternate with soft cheese, you can use the crescenza cheese. Bake at 200 degrees for a few minutes, just long enough to melt the cheese.
You can preserve the baked carrots in the fridge for a couple of days covered with plastic wrap or closed in an airtight container. You can then taste them at room temperature.
