Baked potatoes are a classic and tasty side dish that both adults and children enjoy: here is the recipe for making them roast, crunchy, diced and flavored with garlic, thyme, rosemary, or the aromatic herbs you prefer. The ideal side dish to accompany meat or fish main courses, especially roast meat. Here's how to prepare them, with tips and advice to make a tasty and irresistible side dish, and get perfect baked potatoes.


Wash and peel the potatoes, cut them into cubes of the same size and boil them for 5 minutes in boiling salted water. Drain them, transfer them to a bowl and season with extra virgin olive oil, salt and thyme, or with the aromatic herb of your choice. Preheat the oven in a convection mode at 200°, leaving in it the empty pan or the baking dish inside which you will cook the potatoes.

As soon as the oven reaches the temperature, remove the pan, pour a little oil, add the potatoes, whole and unpeeled garlic cloves and rosemary. Bake at 200 degrees in a convection mode for about 40-50 minutes, or until golden brown: it could take up to an hour. Halfway through cooking mix the potatoes so that they will be evenly cooked. Once cooked, remove the potatoes from the oven, remove the garlic, add salt and pepper and let it cool. Your baked roast potatoes are hot and ready to be served on the table.


To prepare baked potatoes, use yellow-paste or red-skinned potatoes: they are more compact and contain less starch.

Cut the potatoes into wedges or cubes of the same size, so as to ensure uniform cooking.

To get perfect baked potatoes you can use this little tip: once you peel and cut the potatoes in half, scratch them with a fork on both sides, creating streaks. Then cut them into pieces and soak them in cold water for 30 minutes. Then proceed as per recipe.

If you want to cook the potatoes in the static oven, raise the temperature by 20 ° and continue cooking for 10 minutes or until the potatoes are golden brown.

For cooking, prefer a non-stick metal baking tray to make golden potatoes. Add salt and pepper to the potatoes after removing them from the oven and serve immediately hot and crispy, otherwise they may become too soft.

Instead of blanching the potatoes in boiling water, you can pass them in the microwave oven before cooking, to eliminate the starch and moisture inside. In this case, cut them into cubes and cook them at medium temperature for 4 minutes. Then proceed as per recipe.
