Cut the pumpkin in to long fries of about 2 to 3 inch length and place them all together in a large bowl.
Add enough water in to this bowl to easily immerse the pumpkins and soak them for at least 30 minutes. Preheat the oven to 200 degrees C and line a baking tray with butter paper. Drain the pumpkin fries and dry them with a paper towel. Add the corn starch, olive oil, paprika, garlic powder to the fries and mix them all with hands so that the fries are evenly coated all over.
Carefully spread the fries in a single layer on the prepared baking tray. Bake the fries in the preheated oven for about 10 minutes or until they are crisp and golden brown in color. Once the fries are done, season them with salt and evenly sprinkle parsley on them. Serve and enjoy!
Make sure you cut and slice the pumpkin as mentioned in the recipe to get the desired shape of pumpkin fries. You may also choose to flip the pumpkin fries once when they are half way in to the baking. It is optional for you to sprinkle some shredded parmesan cheese over the baked fries. Maintain the baking temperature and you might need to keep a watch on the fries in the final minutes of baking.
