Nicely wash and peel the potatoes. Cut the potatoes in to even size dice shapes of about 1 inch. Preheat the oven to 200 degrees C. In an oven proof baking dish add the diced potatoes. Roughly place the butter cubes over the potato pieces. Season the potatoes with salt and black pepper powder.
Cover the baking dish with an aluminum foil and bake the potatoes for about 12 to 15 minutes or until the potatoes are just about tender. You may check the degree of doneness of potatoes by inserting a fork in the potato piece or poke with a knife. Remove the foil and randomly spread the ranch dressing, mayonnaise evenly over the baked potatoes. Now, evenly sprinkle the cheddar cheese and mozzarella over the dressing layer to cover almost the entire baking dish. Again place the baking dish in the oven, this time uncovered, for about 4 to 5 minutes at 200 degrees C or until the cheese melts and turns golden brown in color. Serve hot and enjoy!
Make sure you remove the eyes of the potato and wash it nicely before you peel and dice. You may also leave the skin on to the potatoes and not peel it increase the fiber content of the dish. Do not over cook the potatoes else the dish will turn in to a mash.
